Some of these questions may be easily answered, we really just need a confirmation.

1) Does ZMANDA capable of incremental backups? How exactly does it work?

2) I understand I will need a ZMANDA Server for my Linux server. We plan on also using S3. Is there anything else we will need? Do I need ZMANDA Backup, and the restore program?

Amanda uses native tools. It uses native tools to do incremental backups for example: gnu tar.

I'm not sure if I have understood your question correctly. Zmanda server includes backup and restore program. You just need to install Zmanda server package on the Linux server.

So how are incremental backups possible? Does Amanda do a Select for all the data between two dates, or does it simply copy a log file?

Yes. incremental backups are possible. It depends on the application being used. If you are using gnu tar, it will select all changes since last backup.
